Black Perigord Truffle will keep for over a week if stored correctly. The key is keeping the truffles dry as moisture will encourage rotting and quickly turn them bad.
Your truffle will have been cleaned prior to delivery but check for any hidden dirt and brush off with a clean brush.
Wrap your truffle in a fresh, clean sheet of kitchen towel and place it in a clean airtight container in the fridge. Change the paper towel every 24 hours and rewrap the truffle. You can also store your truffle (wrapped in the paper towel in an airtight container) with fresh eggs and use the eggs for making fresh pasta, scrambled eggs or an omelette, or in arborio rice and use the rice to make a risotto. The truffle flavour permeates the eggs and rice and makes your dishes taste extra good.
